Disney Copycat Recipe: Ice Cream Cookie Sandwich

Disney treats are an integral part of the Disney vacation experience. Over the years we’ve found several Disney treats that hold a special place in our hearts, and I’ve even perfected bringing some of them home for souvenir snacks. However, ice cream is not a treat you can pack. This is why I’m excited to share our Disney Copycat Recipe Ice Cream Cookie Sandwich.

I first discovered these ice cream cookie sandwiches at Beaches and Cream at Disney’s Beach Club Resort and now a trip to Disney World is not complete without one. Unfortunately, you can’t use just any chocolate chip cookie to make the Disney copycat ice cream cookie sandwich.

Beaches and Cream ice cream cookie sandwiches have a perfectly designed chocolate chip cookie. The cookie is a mix of slightly crunchy on the outside so it doesn’t get soggy, but chewy on the inside so the cookie doesn’t crumble.

Making Your Own Disney Copycat Ice Cream Cookie Sandwich

I modified a traditional chocolate chip cookie dough recipe to get a similar texture and flavor of a Disney ice cream cookie sandwich. Bake some chocolate chip cookies using my recipe, let the cookies cool, and then smoosh your favorite ice cream between the two cookies.

There are few baking supplies that make this recipe easier. The first item is a cookie scoop (affiliate link: Buy on Amazon). Cookie scoops help you have similar sized cookies which then bake evenly.

Another item that I’ve found helpful for baking cookies for many years are Airbake cookie sheets (affiliate link: Buy on Amazon). They have a thin layer of air between the metal which protects cookies from burning.

Lastly, I always use a cooling rack (affiliate link: Buy on Amazon) when I bake cookies, cakes, or cupcakes. This is because if you leave the cookies on the cookie sheet until they are cool, the cookies end up overcooked.

Disney Copycat Ice Cream Cookie Sandwich

Crunchy, chewy, and delicious chocolate chip cookies made from scratch pair perfectly with ice cream for a Disney Copycat Ice Cream Cookie Sandwich

Total Time 35 minutes


  • 2¼ cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup dark brown sugar, firmly packed
  • ½ cup granulated sugar
  • 1 cup softened butter
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 package of semi-sweet chocolate chips


    1. Preheat the oven to 375°F.

    2. Combine flour, salt, and baking soda in a bowl and gently stir. Set aside.

    3. Use a hand or stand mixer to cream butter for 30 seconds.

    4. Add sugar and brown sugar to the butter and beat until light and fluffy in texture.

    5. Add eggs to butter mixture one at a time and beat until incorporated. After eggs are fully mixed, add vanilla.

    6. Slowly add dry ingredients until batter is fully mixed. Avoid overmixing.

    7. Add chocolate chips and use a spoon to stir them into the dough.

    8. Use a 1½-inch cookie scoop to place dough onto ungreased cookie sheet.

    9. Bake for 8 to 10 minutes. Exact time will vary depending on your oven.

    10. Remove cookies from the oven and place on a cooling rack.

    11. Once cookies are cool, add a scoop of softened ice cream (I prefer vanilla) to one cookie then top with a second cookie.


Store any cookies not immediately used in an air tight container to keep them fresh for snacking or more ice cream cookie sandwiches later.
